What a go...Wow it looks like I better start baking! What a good Idea!! I can't wait to try all of the recipes posted!<BR/>My parents are origionally from Slovakia, so of course, my favorite food is the Slovak Traditional dish Halusky!<BR/><BR/>Ingredients: <BR/>o 5-6 Potatoes <BR/>o 1- 2 cups flour<BR/>o Salt <BR/>o 1 egg <BR/><BR/>Instructions: <BR/>o Peel potatoes and finely shred them. <BR/>o Add egg and flour. Make a dough that is not too tough but not to watery. You may use more or less flour or add a little bit of water if it is too tough. <BR/>o Add 1 tsp of salt. <BR/>o Boil water w 2 tbsp of salt. I usually put all of the dough on to a plate and take a knife and scratch little pieces off of the plate into the pot, it's so much easier than anything else I have tried.<BR/><BR/>o When halusky are done they will float on top of the water, Pick them out with a strainer. <BR/><BR/>o Because I didn't find bryndza here in the US, (it is cheese from sheep), mom uses some Feta Cheese and some cream cheese, and 3-4 tbsp of milk. <BR/><BR/>Personally, I like to use about 4 of those little triangle cheeses (laughing cow) a small container of Sour cream, a little bit of Feta (about 1/4 cup) and 3 tablespoons of Milk. <BR/><BR/>Another option- I just found out that Brynza cheese is actually just a mild Feta cheese. So if you wash the feta thoroughly and add melted butter- It should be similar to the Slovak Halusky. Or maybe you can just mix all of the above and make some really good Halusky!<BR/>o Heat everything together. Mix all the time. When it starts to boil, remove from the heat. <BR/>o Cut up little pieces of bacon and fry them. I also like chopping up an onion and frying them with the bacon. I plan on trying to start some giveaways come the beginning of the year.<BR/>My recipe is for Festive Rice Pudding that became my grandpa's specialty after he learned to cook at 80 years old.<BR/><BR/>3 c cooked rice<BR/>1 qt milk<BR/>3 eggs, slightly beaten<BR/>3/4 c sugar<BR/>3 T melted butter/margarine<BR/>Cinnamon<BR/>3/4 c raisins<BR/>Kram (two dots over the "a")<BR/>Whipped cream<BR/><BR/>Heat cooked rice and milk in top of double boiler. Combine eggs, sugar, salt, butter. Pour rice and milk into greased 2 1/2 quart baking dish. Slowly pour egg mixture over top and mix well. Bake at 350º for 40 minutes. (stir after 15 min.) Sprinkle cinnamon over top when done. Serve with Kram and whipped cream.<BR/><BR/>Kram<BR/>3 c grape juice <BR/>1 c sugar<BR/>4 T cornstarch<BR/>Thicken the grape juice and sugar with the cornstarch. Cook until thick. Cream cheese <BR/>2 c. sour cream<BR/>2 T. cornstarch <BR/>2 t. vanilla <BR/>Cherry topping (below)<BR/><BR/>Preheat oven to 350º F. In medium bowl with fork, mix graham cracker crumbs, walnuts, butter, and ¼ c. sugar. Press mixture into bottom and around side of 9” by 3” spring form pan to within 1 ½ “of top.<BR/>In large bowl wit mixer at medium speed, beat cream cheese until smooth: slowly beat in 1 ½ c. sugar.
