  1. My favorite quick recipe is for crab rangoons.
    8 oz. cream cheese, softened
    4 green onions, chopped fine
    4 oz. fake or real crabmeat, chopped
    mix well.
    using wonton wrappers, put approximately 1/2 tsp. of filling in center. Pull the four corners together and squeeze to form a pouch. I use my mini muffin tin and push each wonton into cup. This recipe should make 24-28 rangoons. since this is more than the tin holds i put the extras in between. if you don't have a mini muffin tin, you can just put them on a baking sheet. Pop into a 400' oven ofr 8-9 minutes. These are good and NOT fried so they are good for you!

  2. Okay I am ready to win this book, so here is my favorite recipe and it is oh so simple.

    Pimenot cheese spread.
    shredded chedder cheese
    real mayo
    sliced pimentos(jar)
    salt & pepper to taste.

    Ok, all you do is mix each of these up adding as much mayo as you like to taste, there is no certain amount because each person has a different prefference for the spread. This is yummy, is great with dipping Frito chips and is also great as a sandwich. Enjoy and Happy Holidays.

  3. Chocolate Peanut Butter Bars

    Ingredients:
    2 1/2 cups graham cracker crumbs
    1 cup peanut butter
    1 cup butter, melted
    2 cups confectioners' sugar
    2 cups semi sweet chocolate chips

    Directions:
    In a medium bowl, stir together graham cracker crumbs, confectioners' sugar, peanut butter & melted butter. Press firmly into the bottom of a 9x13 inch pan. Melt chocolate chips over a double boiler or in the microwave, stirring occasionally. Spread melted chocolate over the crumb crust. Chill for about 5 minutes, then cut into bars before the chocolate is completely set, then chill until ready to serve.

    Soft Chocolate Chip Cookies

    Ingredients

    * 2 1/4 cups flour
    * 1 teaspoon baking soda
    * 3/4 cup packed brown sugar
    * 1/2 cup butter, softened
    * 1/2 cup shortening
    * 1/4 cup sugar
    * 1 (4 ounce) package instant vanilla pudding
    * 1 teaspoon vanilla extract
    * 1/8 teaspoon almond extract
    * 2 eggs, beaten
    * 2 cups chocolate chips

    Directions
    Preheat oven 350 degrees.


    Combine flour and baking soda.

    In a large bowl beat brown sugar, sugar, butter, shortening, pudding mix, vanilla, and almond extract.

    Mix until well blended.

    Add eggs and mix well.

    Beat in the flour mixture.

    Stir in chocolate chips.

    Drop by rounded teaspoonful and bake 10-12 minutes.

    My Favorite recipe is for:
    Baked Pineapple
    1/2 cup sugar
    1 egg
    1 16oz can crushed pineapple
    1/4 cup milk
    2 TBLS Cornstarch
    Optional 1/2 cup raisins
    Mix all ingred. together in a casserole dish. Sprinkle top with cinnamon. Dot with a few pats of butter. Bake uncovered at 350 for 45 minutes.

  6. My favourite recipe -

    ANZAC Biscuits: Cookies

    1 cup flour
    pinch salt
    1 cup sugar
    1 cup rolled oats
    125 grams butter
    1 tblsp golden syrup
    2 tblsp water
    1 tsp baking soda
    1 tsp vanilla essence

    1.Sift the flour and salt together into a large bowl. Stir in the sugar and rolled oats.
    2.Melt the butter, golden syrup and vanilla together. Dissolve the baking soda in the boiling water and mix into the flour with the melted butter, stirring until all the ingredients are combined.
    3.Roll tablespoonfuls of the mixture into balls and place on greased trays. (Flatten lightly with a fork.)
    4.Bake at 180 degrees Celsius for about 12-15 minutes until the biscuits have flattened out and have become a reddish brown. Transfer to a cake rack to cool. They will crispen as they cool. Store in an airtight container. Makes 3 dozen.


    History has it that ANZAC biscuits or cookies to Americans, were baked by women during WW1 for their sons/husbands/brothers/fiances etc overseas on deployment. Basically they are a rolled oat biscuit made without eggs in order that they keep longer. The golden syrup is the binding agent, golden syrup is basically a light treacle.

    One of My Favorite Recipes:
    Hummus~
    1 can of drained Chick Peas
    Juice for half a lemon
    1 - 2 cloves garlic(I love garlic)
    pinch or 2 of salt
    pinch of paprika
    Olive oil (about 1/4 cup)
    1 grated carrot

    Put all in food processor and blend away. It is a thick consistancy.
    I love this with vegie's crackers and baked flour tortia chips.

    I make the tortia chips:
    Using the cirle tortia wrap:
    cut into four pieces:
    brush some olive oil on both sides
    sprinkle with coarse salt and bake in the oven at 350 degree's
    Flip chips at the 5 minut mark and watch for browning!
